Three master chefs from the renowned, Michelin-recognized restaurant Zandunga in Oaxaca are bringing the vibrant flavors, traditional rituals, and magical atmosphere of their homeland straight to Basel.
Join a fun and hands-on cooking class where we’ll explore a variety of traditional dishes and create a delicious, well-rounded menu together! They are offering special sessions for profesional cooks with limited attendance.

Wednesday November 12
Preparation of Mole Negro. Mole Negro is considered a culinary masterpiece due to its complexity: it can contain over 30 ingredients, including various types of chili peppers (such as the rare Chilhuacle Negro), spices, seeds, dried fruits, bread, chocolate, and much more. Its preparation is elaborate and requires patience, skill, and experience — which gives it its special value.
Thursday, November 13
Tamales filled with beans and chicken in mole.
Empanadas, garnachas, memelas, and tortillas.
Salsas: green, red, and seed-based.
Beans with avocado leaf.
Horchata water or mango water with mint.
All accompanied by mezcal with agave worm salt.
The following stews:

- Mole Verde
- Mole Rojo

The price includes all ingredients, a recipe book, and an apron.
